Ingredients

  • 1 tbsp lite ranch dressing
  • 1 high-fiber tortilla
  • 3 oz barbeque chicken thigh
  • 1/4 cup chopped lettuce
  • 1 cup mixed berries
  • 1 ear of corn
  • 1 cup mixed berries
  • 1 high-fiber tortilla
  • 1/4 cup tomatoes

Preparation

  1. Toss chicken thigh in barbeque sauce and let it sit for 30 minutes (can be done the night before).
  2. Heat up the grill to medium high and cook thoroughly.
  3. Slice the thigh meat.
  4. Cut corn off of one cob, chop a 1/4 cup of lettuce and a 1/4 cup of tomatoes.
  5. Combine corn, lettuce, tomato and meat in a high-fiber tortilla wrap with 1 tablespoon of lite ranch dressing.
  6. Serve with a side of yogurt and fresh berries.
