Baked Citrus and Herb Salmon

Ingredients

  • 4 pieces salmon (3 oz each)
  • 1 tbsp grated orange zest
  • 1 tbsp grated lemon zest
  • 2 sprigs oregano
  • 2 sprigs thyme
  • 2 sprigs tarragon
  • 1 lemon sliced
  • salt
  • pepper

Preparation

  1. Preheat oven to 450 degrees.
  2. Sprinkle salmon filets with salt and pepper.
  3. Combine 1 tablespoon of grated orange zest and 1 tablespoon of grated lemon zest. Sprinkle mixture over the salmon.
  4. Arrange 2 sprigs of thyme, 2 sprigs of oregano, and 2 sprigs of tarragon over the salmon. 
  5. Slice lemon, and place cut pieces on top of the salmon.
  6. Place fish on a tinfoil-covered baking sheet coated with non-stick cooking spray.
  7. Cover fish with foil.
  8. Bake for 10 minutes or until fish flakes easily when tested with a fork.
