Ingredients

  • 1 tsp olive oil
  • 3/4 lb skinless, boneless chicken breasts (cut into bite sized pieces)
  • 1/2 cup chopped onion
  • 3 garlic cloves, minced
  • 1/3 cup bottled barbecue sacue (we used Sweet Baby Rays)
  • 1 15-ounce can black beans, drained
  • 1/2 cup shredded low-fat cheddar cheese
  • 4 10-inch whole-wheat tortillas
  • 1/4 cup low-fat sour cream

Preparation

  1. Heat oil in a large skillet over medium heat.
  2. Slice chicken into bite-sized pieces.
  3. Once oil has heated, add chicken pieces, 1/2 an onion, and 3 garlic cloves into the skillet. Stir consistently for 6 minutes.
  4. Once the meat has cooked through, stir in 1/3 a cup of barbeque sauce.
  5. Sprinkle cheese on top and cook for five minutes.
  6. Warm toritllas in the microwave for 50 seconds.
  7. Spoon 1/2 cup helpings of the chicken onto toritillas.
  8. Garnish with 1 tablespoon of sour cream and roll it into a burrito.
