BBQ Chicken Burrito

Ingredients
- 1 tsp olive oil
- 3/4 lb skinless, boneless chicken breasts (cut into bite sized pieces)
- 1/2 cup chopped onion
- 3 garlic cloves, minced
- 1/3 cup bottled barbecue sacue (we used Sweet Baby Rays)
- 1 15-ounce can black beans, drained
- 1/2 cup shredded low-fat cheddar cheese
- 4 10-inch whole-wheat tortillas
- 1/4 cup low-fat sour cream
Preparation
- Heat oil in a large skillet over medium heat.
- Slice chicken into bite-sized pieces.
- Once oil has heated, add chicken pieces, 1/2 an onion, and 3 garlic cloves into the skillet. Stir consistently for 6 minutes.
- Once the meat has cooked through, stir in 1/3 a cup of barbeque sauce.
- Sprinkle cheese on top and cook for five minutes.
- Warm toritllas in the microwave for 50 seconds.
- Spoon 1/2 cup helpings of the chicken onto toritillas.
- Garnish with 1 tablespoon of sour cream and roll it into a burrito.
