Ingredients

  • 1 12" Boboli Pizza 100% Whole Wheat Crust
  • 1 small red onion, sliced thinly in half circles
  • 1/2 cup Jack Daniels Spicy Original BBQ sauce
  • 2 boneless, skinless chicken breasts
  • 1 cup shredded cheddar cheese (reduced fat or 2%)
  • 1 cup low-fat shredded mozzarella cheese
  • cooking spray
  • 2 cloves garlic (coarsely chopped)
  • 1 jalapeno thinly sliced
  • 1/2 cup black beans
  • 1/2 cup canned corn

Preparation

  1. Preheat oven according to Boboli instructions.
  2. Roll out crust and lightly spray with olive oil.
  3. While the oven is heating, toss 1 small red onion (chopped) with 2 cloves of garlic (chopped), and 1 sliced jalapeno pepper.
  4. Place mixture on the grill for 2 to 3 minutes or until tender, set aside.
  5. Grill two chicken breasts.
  6. While chicken is cooking, spread barbeque sauce onto crust. Add grilled onions and vegetables.
  7. Top with 1 cup of low-fat shredded cheddar.
  8. Remove chicken from gril and chop into small pieces.
  9. Spread chicken on the pizza.
  10. Add a 1/2 cup of black beans and a 1/2 cup of canned corn. Top with 1 cup of low-fat shredded mozzarella cheese.
  11. Place pizza in over for 10 to 12 minutes.
