Preparation
- Toss chicken thigh in barbeque sauce and let it sit for 30 minutes (can be done the night before).
- Heat up the grill to medium high and cook thoroughly.
- Slice the thigh meat.
- Cut corn off of one cob, chop a 1/4 cup of lettuce and a 1/4 cup of tomatoes.
- Combine corn, lettuce, tomato and meat in a high-fiber tortilla wrap with 1 tablespoon of lite ranch dressing.
- Serve with a side of yogurt and fresh berries.
