Carrot and Basil Marinara Sauce

Ingredients
- 2 cans (28 oz) crushed tomatoes
- 3 oz extra virgin olive oil
- 1 tsp dried oregano
- 1 onion, diced
- 1 carrot, chopped
- 1/4 cup basil, chiffonade
- salt
- pepper
Preparation
- In a large saucepan, heat extra virgin olive oil.
- Add diced onions, carrots, and garlic to the pan and saute until onions are softened..
- Add tomatoes. If using whole tomatoes, crush with your hands. Stir up and bring to a boil.
- Turn down to a bubbling simmer and add oregano.
- Still regularly for the next 45 minutes until sauce thickens.
- When ready, add fresh basil, salt and pepper.
