Ingredients

  • 12 oz hummus
  • 12 oz chicken breast
  • 4 cups romaine lettuce
  • 1 cup grape tomatoes
  • 1/2 cup kalamata olives
  • 1 cup diced cucmbers
  • 1/2 cup feta cheese
  • 1/2 cup red wine vinegar
  • 1 piece flatbread

Preparation

  1. In a saute pan, cook 12 ounces of chicken breast. cool and slice into small pieces.
  2. Lightly toast flatbread, then cover it with 12 ounces of hummus.
  3. In a mixing bowl, toss 4 cups of romaine lettuce, 1 cup of grape tomatoes, 1/2 cup of kalamata olives, 1 cup of diced cucumbers, 1/2 cup of feta cheese, and 1/2 cup of red wine vinegar.
  4. Cut the flatout into 4 pieces and top each place with 1/4 of the tossed salad.
