Chicken and Mushroom Penne

Ingredients
- 2 packages penne pasta
- 12 oz chicken breast
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 tbsp extra virgin olive oil
- 1/2 cup onions
- 1/2 cup dry sherry
- 1 cup fat-free, sodium-free chicken broth
- 1/2 cup lite cream cheese
- 2 oz grated Parmesan
- 1 cup mushrooms
Preparation
- Cook pasta according to package directions.
- While pasta is cooking, slice 12 ounces of chicken breast into strips.
- Season chicken with 1/4 teaspoon of salt and 1/4 teaspoon of pepper.
- Place 1 tablespoon of extra virgin olive oil in a large non-stick skillet over medium-high heat.
- Add chicken, 1 cup of sliced mushrooms, and 1/2 cup of onions. Saute for 7 minutes.
- Remove mixture from the pan. Cover to keep it warm.
- Add 1/2 cup of dry sherry to pan. Scrape to loosen brown bits.
- Stir in 1 cup of chicken broth and 1/2 cup of lite cream cheese. Bring the mixture to a boil.
- Reduce heat. Simmer until cream cheese melts (about 3 minutes). Stir occasionally.
- Return chicken mixture to pan, and cook thoroughly until heated.
- Serve over pasta. Sprinkle with 2 ounces of grated Parmesan cheese.
