Ingredients

  • 2 packages penne pasta
  • 12 oz chicken breast
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp extra virgin olive oil
  • 1/2 cup onions
  • 1/2 cup dry sherry
  • 1 cup fat-free, sodium-free chicken broth
  • 1/2 cup lite cream cheese
  • 2 oz grated Parmesan
  • 1 cup mushrooms

Preparation

  1. Cook pasta according to package directions.
  2. While pasta is cooking, slice 12 ounces of chicken breast into strips.
  3. Season chicken with 1/4 teaspoon of salt and 1/4 teaspoon of pepper.
  4. Place 1 tablespoon of extra virgin olive oil in a large non-stick skillet over medium-high heat. 
  5. Add chicken, 1 cup of sliced mushrooms, and 1/2 cup of onions. Saute for 7 minutes. 
  6. Remove mixture from the pan. Cover to keep it warm.
  7. Add 1/2 cup of dry sherry to pan. Scrape to loosen brown bits. 
  8. Stir in 1 cup of chicken broth and 1/2 cup of lite cream cheese. Bring the mixture to a boil.
  9. Reduce heat. Simmer until cream cheese melts (about 3 minutes). Stir occasionally.
  10. Return chicken mixture to pan, and cook thoroughly until heated. 
  11. Serve over pasta. Sprinkle with 2 ounces of grated Parmesan cheese.
