Ingredients

  • 3 oz chicken breast
  • 1/2 cup honey
  • 1/2 cup mustard
  • 1 yam
  • 1/4 tsp dried basil
  • 1/4 tsp dried oregano
  • 1 cup fresh fruit
  • 1 tbsp extra virgin olive oil
  • 1 pinch salt and pepper
  • 2 slices high-fiber, whole wheat bread

Preparation

  1. Preheat oven to 450 degrees.
  2. Dice 1 yam. Season yam pieces with 1/4 teaspoon of dried oregano, 1/4 teaspoon of dried basil, 1 tablespoon of extra virgin olive oil, and salt and pepper (to taste).
  3. Place yams on a baking sheet, and bake for 20 minutes.
  4. While yams are cooking, grill a 3-ounce chicken breast for 2 minutes on each side.
  5. Place grilled chicken breast on a baking sheet, and bake for 10 minutes.
  6. Once cooked, use the flat side of a knife to mash the yams.
  7. Take chicken from the oven and cut it into pieces.
  8. Place mashed yams on 1 slice of high-fiber, whole wheat bread.
  9. Top yams with sliced chicken, and top it with 1 slice of bread.
  10. Serve with 1 cup of fresh fruit.
