Ingredients
- 3 oz chicken breast
- 1/2 cup honey
- 1/2 cup mustard
- 1 yam
- 1/4 tsp dried basil
- 1/4 tsp dried oregano
- 1 cup fresh fruit
- 1 tbsp extra virgin olive oil
- 1 pinch salt and pepper
- 2 slices high-fiber, whole wheat bread
Preparation
- Preheat oven to 450 degrees.
- Dice 1 yam. Season yam pieces with 1/4 teaspoon of dried oregano, 1/4 teaspoon of dried basil, 1 tablespoon of extra virgin olive oil, and salt and pepper (to taste).
- Place yams on a baking sheet, and bake for 20 minutes.
- While yams are cooking, grill a 3-ounce chicken breast for 2 minutes on each side.
- Place grilled chicken breast on a baking sheet, and bake for 10 minutes.
- Once cooked, use the flat side of a knife to mash the yams.
- Take chicken from the oven and cut it into pieces.
- Place mashed yams on 1 slice of high-fiber, whole wheat bread.
- Top yams with sliced chicken, and top it with 1 slice of bread.
- Serve with 1 cup of fresh fruit.
