Ingredients

  • 1 package no-boil lasagna
  • 1 package frozen spinach
  • 2 chicken breasts
  • 1 pint low-fat ricotta cheese
  • 1 egg
  • 8 oz bread crumbs
  • 1 package shredded mozzarella
  • 1/2 container low-fat Parmesan cheese
  • 1 jar Classico Spinach Florentine Sauce

Preparation

  1. Preheat oven to 350 degrees.
  2. In bowl, combine 1 package of frozen spinach, 2 chicken breasts (cubed), 1 pint of low-fat ricotta cheese, 1 egg, and 8 ounces of bread crumbs.
  3. In a baking dish, begin assembling the lasagna.
  4. Start with a thin layer of sauce topped with no-boil lasagna noodles.
  5. Add some of the filling, top with sauce, and layer with shredded mozzarella cheese.
  6. Continue this until you've used up all of the ingredients (about 3 layers).
  7. Once the lasagna is assembled, top it with the remaining shredded mozzarella cheese and 1/2 container of low-fat Parmesan cheese.
  8. Cover with tinfoil and bake for 45 minutes. 
  9. Uncover and bake for 15 more minutes, until golden. 
  10. Remove from oven and allow 15 additional minutes for lasagna to set up.  Cut into portions.
