Ingredients
- 1 package no-boil lasagna
- 1 package frozen spinach
- 2 chicken breasts
- 1 pint low-fat ricotta cheese
- 1 egg
- 8 oz bread crumbs
- 1 package shredded mozzarella
- 1/2 container low-fat Parmesan cheese
- 1 jar Classico Spinach Florentine Sauce
Preparation
- Preheat oven to 350 degrees.
- In bowl, combine 1 package of frozen spinach, 2 chicken breasts (cubed), 1 pint of low-fat ricotta cheese, 1 egg, and 8 ounces of bread crumbs.
- In a baking dish, begin assembling the lasagna.
- Start with a thin layer of sauce topped with no-boil lasagna noodles.
- Add some of the filling, top with sauce, and layer with shredded mozzarella cheese.
- Continue this until you've used up all of the ingredients (about 3 layers).
- Once the lasagna is assembled, top it with the remaining shredded mozzarella cheese and 1/2 container of low-fat Parmesan cheese.
- Cover with tinfoil and bake for 45 minutes.
- Uncover and bake for 15 more minutes, until golden.
- Remove from oven and allow 15 additional minutes for lasagna to set up. Cut into portions.
