Ingredients

  • 2 chicken breasts (6 oz)
  • 2 pieces toasted high-fiber whole wheat bread, crumbed
  • 4 tbsp grated Parmesan
  • 1 tsp dried basil
  • 1 tbsp chopped parsley
  • 1 egg white
  • 2 cups tomato sauce
  • 1 tbsp extra virgin olive oil
  • 2 oz shredded fresh mozzarella

Preparation

  1. Combine 3 tablespoons of grated Parmesan, 1 tablespoon of dried basil, and 1 tablespoon of chopped parsley in a bowl.
  2. Taste, season with salt and pepper if needed.
  3. Take 2 pieces of high-fiber whole wheat bread and crumble it
  4. In another bowl, beat 1 egg white.
  5. Place each piece of chicken first in the egg white.
  6. Transfer the chicken to the bread crumbs and finally move to a large plate.
  7. Preheat oven to 450 degrees.
  8. Add 1 tablespoon of extra virgin olive oil to a large saute pan and heat over high-medium heat. 
  9. Add chicken to the hot pan and cook for approximately 2 minutes on the first side, and 1 minute on the other side.
  10. Add tomato sauce to pan; allow to heat through.
  11. Remove pan from heat and sprinkle with 2 ounces of fresh mozzarella cheese and 1 tablespoon of Parmesan.
  12. Place in oven until cheese melts.
  13. Serve over pasta if desired.
