Ingredients
- 2 chicken breasts (6 oz)
- 2 pieces toasted high-fiber whole wheat bread, crumbed
- 4 tbsp grated Parmesan
- 1 tsp dried basil
- 1 tbsp chopped parsley
- 1 egg white
- 2 cups tomato sauce
- 1 tbsp extra virgin olive oil
- 2 oz shredded fresh mozzarella
Preparation
- Combine 3 tablespoons of grated Parmesan, 1 tablespoon of dried basil, and 1 tablespoon of chopped parsley in a bowl.
- Taste, season with salt and pepper if needed.
- Take 2 pieces of high-fiber whole wheat bread and crumble it
- In another bowl, beat 1 egg white.
- Place each piece of chicken first in the egg white.
- Transfer the chicken to the bread crumbs and finally move to a large plate.
- Preheat oven to 450 degrees.
- Add 1 tablespoon of extra virgin olive oil to a large saute pan and heat over high-medium heat.
- Add chicken to the hot pan and cook for approximately 2 minutes on the first side, and 1 minute on the other side.
- Add tomato sauce to pan; allow to heat through.
- Remove pan from heat and sprinkle with 2 ounces of fresh mozzarella cheese and 1 tablespoon of Parmesan.
- Place in oven until cheese melts.
- Serve over pasta if desired.
