Ingredients

  • 2 packages ground turkey
  • 1 high-fiber tortilla
  • 1 tbsp low-fat shredded cheese
  • 1 package frozen vegetables
  • 2 tbsp hummus
  • 1 tbsp salsa
  • 1 can diced tomatoes
  • 1 can tomato puree
  • 1 diced onion
  • 3 packets chili seasoning

Preparation

  1. In a large, two-handled pot mix extra virgin olive oil, carrots and onions. Cook over medium-high heat for two minutes.
  2. Add 2 packages of ground turkey and mix together.
  3. Add three seasoning packets, 1 can of diced tomatoes and 1 can of tomato puree. Stir together and lower heat to medium-low setting.
  4. Stir for 5 to 7 minutes. Add 1 can of black beans. Season with salt and pepper to taste.
  5. Place a serving in a bowl for yourself (refrigerate the rest for other meals).
  6. Microwave a high-fiber tortilla for 25 seconds. Place a serving of chili in the middle of the tortilla.
  7. Top with 1 tablespoon low-fat cheese of your choice. Roll up burrito-style.
  8. Serve with a side of sliced cucumber, carrots and vegetables with 2 tablespoons of hummus for dipping.
  9. Serve with salsa if desired.
  10. After separating your serving, place the rest in the refrigerator for another meal.
