Chilled Flaked Salmon

Ingredients

  • 6 oz salmon
  • 1 red potato
  • 5 carrots
  • 1 tbsp salad dressing
  • 1 cup fresh fruit
  • 1/2 cup Teriyaki dressing
  • 1 tbsp extra virgin olive oil
  • 1/2 bag spinach

Preparation

    1. Marinate salmon for 30 minutes in a Teriyaki marinade of your choice.
    2. Pre-heat oven to 450 degrees.
    3. While salmon is marinating, cut and wash 5 carrots and one small red potato.
    4. In a large bowl, toss carrots and potato slices with salt, pepper and extra virgin olive oil.
    5. Place mixture on a tinfoil-lined pan and place in oven for 20 minutes.
    6. Take veggies out of the oven and sit to cool.
    7. Place marinated salmon on a sheetpan covered with tinfoil and sprayed with non-stick spray.
    8. Bake for approximately 10 minutes.
    9. Save 1/2 the salmon and vegetables for another meal.
    10. Place salmon and vegetables over 1/2 bag of baby spinach. Serve with a side of fresh fruit.
