Ingredients

  • 1 can coconut milk
  • 12 oz fat-free evaporated milk
  • 3/4 cup uncooked Arborio rice
  • 1/4 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 3 eggs

Preparation

  1. Fill Crock-Pot with 1 can of coconut milk, 12 ounces of fat-free evaporated milk, and 3 eggs.
  2. Stir until eggs are whipped into the liquid.
  3. Add 1/4 cup of granulated sugar, 1/4 cup of packed light brown sugar, 1/2 teaspoon of cinnamon, 1/4 teaspoon of nutmeg, and 1/4 teaspoon of salt.
  4. Mix ingredients well, then stir in 3/4 cup of Arborio rice (uncooked).
  5. Cover and cook on high for 3 to 4 hours (or until rice is tender).
  6. Stir until blended.
  7. Serve warm or chilled. Sprinkle plated pudding with cinnamon and nutmeg.
