Ingredients
- 1 can coconut milk
- 12 oz fat-free evaporated milk
- 3/4 cup uncooked Arborio rice
- 1/4 cup granulated sugar
- 1/4 cup packed light brown sugar
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 3 eggs
Preparation
- Fill Crock-Pot with 1 can of coconut milk, 12 ounces of fat-free evaporated milk, and 3 eggs.
- Stir until eggs are whipped into the liquid.
- Add 1/4 cup of granulated sugar, 1/4 cup of packed light brown sugar, 1/2 teaspoon of cinnamon, 1/4 teaspoon of nutmeg, and 1/4 teaspoon of salt.
- Mix ingredients well, then stir in 3/4 cup of Arborio rice (uncooked).
- Cover and cook on high for 3 to 4 hours (or until rice is tender).
- Stir until blended.
- Serve warm or chilled. Sprinkle plated pudding with cinnamon and nutmeg.
