Ingredients

  • 4 oz ground chicken
  • 1/2 cup mozzarella cheese
  • 1/3 cup red bell peppers
  • 1 basil leaf
  • 1 tbsp Parmesan cheese
  • 1/2 tsp minced garlic
  • 1/3 cup marinara sauce
  • 1 whole wheat tortilla
  • 1 pinch salt
  • 1/4 tsp extra virgin olive oil
  • 1/4 tsp oregano

Preparation

  1. Preheat oven to 400 degrees.
  2. Crumble 4 ounces of raw chicken into a saute pan, and heat until no longer pink.
  3. Dice 1/3 cup of red bell peppers and toss with 1 pinch of salt, 1/2 teaspoon of oregano, 1/2 teaspoon of olive oil, and 1 basil leaf (diced).
  4. Place in a baking dish, and roast until all ingredients are soft.
  5. Take mixture out of the oven, and place 1 whole wheat tortilla in the oven until crisp.
  6. Spread 1/3 cup of marinara sauce on the toasted tortilla, and top it off with the cooked veggie and chicken mix.
  7. Top with 1 tablespoon of Parmesan cheese and 1/2 cup of mozzarella cheese.
  8. Place in the oven until cheese melts.
