Ingredients
- 4 oz ground chicken
- 1/2 cup mozzarella cheese
- 1/3 cup red bell peppers
- 1 basil leaf
- 1 tbsp Parmesan cheese
- 1/2 tsp minced garlic
- 1/3 cup marinara sauce
- 1 whole wheat tortilla
- 1 pinch salt
- 1/4 tsp extra virgin olive oil
- 1/4 tsp oregano
Preparation
- Preheat oven to 400 degrees.
- Crumble 4 ounces of raw chicken into a saute pan, and heat until no longer pink.
- Dice 1/3 cup of red bell peppers and toss with 1 pinch of salt, 1/2 teaspoon of oregano, 1/2 teaspoon of olive oil, and 1 basil leaf (diced).
- Place in a baking dish, and roast until all ingredients are soft.
- Take mixture out of the oven, and place 1 whole wheat tortilla in the oven until crisp.
- Spread 1/3 cup of marinara sauce on the toasted tortilla, and top it off with the cooked veggie and chicken mix.
- Top with 1 tablespoon of Parmesan cheese and 1/2 cup of mozzarella cheese.
- Place in the oven until cheese melts.
