Ingredients

  • 1 tbsp shelled edamame
  • 6 oz boneless, skinless chicken breast
  • 1 Roma tomato
  • 6 cups romaine lettuce
  • 1/3 cup carrots
  • 1 tbsp grated Parmesan cheese
  • 6 broccoli florets
  • 1/4 cucumber
  • 1 tbsp Caesar dressing

Preparation

  1. Slice chicken into strips. Saute in a medium skillet until cooked thoroughly.
  2. Chop Roma tomato, carrots, broccoli florets, and cucumber.
  3. Toss all ingredients into a large bowl with the cooked chicken.
  4. Add edamame to salad, and toss with Caesar dressing.
  5. Top with grated Parmesan cheese.
