Ingredients

  • 1 tbsp shelled edamame
  • 6 oz boneless, skinless chicken breast
  • 1 Roma tomato
  • 6 cups romaine lettuce
  • 1/3 cup carrots
  • 1 tbsp grated Parmesan cheese
  • 6 broccoli florets
  • 1/4 cucumber
  • 1 tbsp Caesar dressing

Preparation

  1. Slice 6 ounces of chicken into strips. Saute in a medium skillet until cooked thoroughly.
  2. Chop 1 Roma tomato, 1/3 cup of carrots, 6 broccoli florets, and 1/4 of a cucumber.
  3. Toss all ingredients into a large bowl with the cooked chicken.
  4. Shell 1 tablespoon of edamame and add, then toss with 1 tablespoon of Caesar dressing.
  5. Top with 1 tablespoon of grated Parmesan cheese.
