Ingredients
- 1 tbsp shelled edamame
- 6 oz boneless, skinless chicken breast
- 1 Roma tomato
- 6 cups romaine lettuce
- 1/3 cup carrots
- 1 tbsp grated Parmesan cheese
- 6 broccoli florets
- 1/4 cucumber
- 1 tbsp Caesar dressing
Preparation
- Slice 6 ounces of chicken into strips. Saute in a medium skillet until cooked thoroughly.
- Chop 1 Roma tomato, 1/3 cup of carrots, 6 broccoli florets, and 1/4 of a cucumber.
- Toss all ingredients into a large bowl with the cooked chicken.
- Shell 1 tablespoon of edamame and add, then toss with 1 tablespoon of Caesar dressing.
- Top with 1 tablespoon of grated Parmesan cheese.
