Ingredients
- 2 tsp canola oil
- 2 tbsp mushrooms, sliced
- 2 tbsp broccoli florets, chopped
- 1/2 cup baby spinach
- 6 egg whites
- 1/8 tsp salt
- 1/8 tsp pepper
- 1/4 cup low-fat cheddar cheese
Preparation
- In a skillet, saute 2 tablespoons of sliced mushrooms, 2 tablespoons of chopped broccoli florets, and 1/2 cup of baby spinach with 2 teaspoons of canola oil.
- Add 6 egg whites over the sauteed vegetables. Scramble the contents of the pan, then top with 1 slice of low-fat cheddar cheese.
- Sprinkle with 1/8 teaspoon of salt and 1/8 teaspoon of pepper.
- Serve with a side of fruit.
