Ingredients

  • 2 tsp canola oil
  • 2 tbsp mushrooms, sliced
  • 2 tbsp broccoli florets, chopped
  • 1/2 cup baby spinach
  • 6 egg whites
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 1/4 cup low-fat cheddar cheese

Preparation

  1. In a skillet, saute 2 tablespoons of sliced mushrooms, 2 tablespoons of chopped broccoli florets, and 1/2 cup of baby spinach with 2 teaspoons of canola oil.
  2. Add 6 egg whites over the sauteed vegetables. Scramble the contents of the pan, then top with 1 slice of low-fat cheddar cheese.
  3. Sprinkle with 1/8 teaspoon of salt and 1/8 teaspoon of pepper.
  4. Serve with a side of fruit.
