Ingredients

  • 3 oz flank steak
  • 1/4 cup brown rice
  • 1 6 inch whole wheat tortilla
  • 1/4 cup sauteed peppers
  • 1/4 cup beans
  • 1 cup berries
  • 1 cup vegetables

Preparation

  1. Rub a 3-ounce flank steak with 1 tablespoon of olive oil, 1 teaspoons of salt, 1 teaspoon of pepper, and 1 teaspoon of Worcestershire sauce.
  2. Grill or cook in a pan to liking.
  3. Cook 1/4 cup of brown rice as directed on package.
  4. While rice is cooking, saute 1/4 cup of peppers in 1 tablespoon of extra virgin olive oil.
  5. Slice cooked steak into strips.
  6. Place steak, peppers and brown rice onto a whole wheat tortilla.
  7. Add 1/4 cup of black beans to the mix.
  8. Wrap up and serve with a side of fresh berries.
