Glazed Cornish Hen Recipe

Ingredients
- 1/4 cup frozen orange juice concentrate
- 1 tbsp chipotle chili powder
- 2 tbsp apricot preserve
- 2 tbsp canola oil
- 2 cornish game hens, halved
- 1 tsp minced garlic
Preparation
- Combine 1 teaspoon of minced garlic, 1/4 cup of frozen orange juice concentrate, 1 tablespoon of chipotle chili powder, 2 tablespoons of apricot preserve, and 2 tablespoons of canola oil in a saucepan.
- Bring mixture to a boil, and simmer for 2 minutes. Remove from heat, and refrigerate to cool.
- Rinse the halved hens and pat dry with a paper towel.
- Place hens in a plastic bag and top with the refrigerated marinade (keep a small amount in a separate dish for later use).
- Turn the hens in the bag to coat them evenly.
- Close the bag and refrigerate for up to 2 hours.
- Preheat the oven to 400 degrees.
- Remove hens from the marinade, and place them in a roasting pan (breast up).
- Roast for 40-45 minute or until cooked thoroughly.
- Pour remaining sauce into a saucepan, bring to a boil.
- Turn down heat and simmer until it thickens. Use the sauce to baste the hens while cooking.
