Ingredients

  • 1/4 cup frozen orange juice concentrate
  • 1 tbsp chipotle chili powder
  • 2 tbsp apricot preserve
  • 2 tbsp canola oil
  • 2 cornish game hens, halved
  • 1 tsp minced garlic

Preparation

  1. Combine 1 teaspoon of minced garlic, 1/4 cup of frozen orange juice concentrate, 1 tablespoon of chipotle chili powder, 2 tablespoons of apricot preserve, and 2 tablespoons of canola oil in a saucepan.
  2. Bring mixture to a boil, and simmer for 2 minutes. Remove from heat, and refrigerate to cool.
  3. Rinse the halved hens and pat dry with a paper towel.
  4. Place hens in a plastic bag and top with the refrigerated marinade (keep a small amount in a separate dish for later use).
  5. Turn the hens in the bag to coat them evenly.
  6. Close the bag and refrigerate for up to 2 hours.
  7. Preheat the oven to 400 degrees.
  8. Remove hens from the marinade, and place them in a roasting pan (breast up).
  9. Roast for 40-45 minute or until cooked thoroughly.
  10. Pour remaining sauce into a saucepan, bring to a boil.
  11. Turn down heat and simmer until it thickens. Use the sauce to baste the hens while cooking.
