Ingredients

  • 1/2 red bell pepper
  • 1/4 red onion
  • 1 tsp extra virgin olive oil
  • 6 oz thinly sliced London Broil
  • 3 slices lite provolone cheese
  • 2 whole wheat hoagie rolls

Preparation

  1. Preheat oven to 425 degrees.
  2. Line two baking sheets with tinfoil.
  3. Toss 1/2 sliced red pepper and 1/4 sliced red onion with 1 teaspoon of extra virgin olive oil.
  4. Place on one baking sheet, and roast until soft (about 10 minutes).
  5. Spray other baking sheet with cooking spray and top with pre-cooked London Broil slices.
  6. Top with the onion and pepper mix and 3 slices of lite provolone cheese.
  7. Place in the oven until cheese is melted (about 5 minutes).
  8. Slice roll in half and toast in the oven. Remove roll from oven and top with ingredients.
  9. Fold and serve.
