Hoisin Pork Sandwich

Ingredients
- 1/2 cup Hoisin sauce
- 1 tbsp chili sauce
- 1 tbsp canola oil
- 1 tbsp ginger
- 1 tbs minced garlic
- 1/4 cup red wine
- 1/4 cup chopped scallions
- 12 oz pork tenderloin
- 1/2 tsp salt
- 4 whole wheat buns
- 4 oz asian salsa
Preparation
- Preheat oven to 350 degrees.
- Sweat 1 tablespoon of ginger and 1 tablespoon of garlic in 1 tablespoon of canola oil.
- Add 1/2 cup of Hoisin sauce, 1 tablespoon of chili sauce, 1/4 cup of chopped scallions, 1/4 cup of red wine, and 1/2 teaspoon of salt.
- Coat pork tenderloin with 3/4 of the sauce. Set the other 1/4 aside for later.
- Combine the above ingredients into a baking dish, and roast until internal temperature reaches 145-150 degrees (about 20-30 minutes). Let sit for 5 minutes.
- Slice thinly. Coat the slice pork with the remainder of the sauce.
- Grill bun, add Asian Slaw, and top with pork mixture.
