Lemon Panko Green Beans

Ingredients
- 2 cups panko bread crumbs
- 4 tbsp extra virgin olive oil
- 1/8 tsp salt
- 1/8 tsp pepper
- 2 1/2 lbs green beans
- 1 tsp lemon juice
Preparation
- In a large frying pan over medium heat, cook 2 cups of panko bread crumbs in 2 tablespoons of extra virgin olive oil.
- Cook for 5 minutes. Stir frequently.
- Stir in an 1/8 teaspoon of salt and an 1/8 teaspoon of pepper.
- Cook until golden (about 5 minutes).
- Steam beans for 7-10 minutes over 1 inch of boiling water. Stir once.
- Combine 2 tablespoons of extra virgin olive oil with 1 teaspoon of lemon.
- Drain beans, and toss with lemon mixture.
- Top with panko crumbs, and serve immediately.
