Ingredients

  • 2 cups panko bread crumbs
  • 4 tbsp extra virgin olive oil
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 2 1/2 lbs green beans
  • 1 tsp lemon juice

Preparation

  1. In a large frying pan over medium heat, cook 2 cups of panko bread crumbs in 2 tablespoons of extra virgin olive oil.
  2. Cook for 5 minutes. Stir frequently.
  3. Stir in an 1/8 teaspoon of salt and an 1/8 teaspoon of pepper.
  4. Cook until golden (about 5 minutes).
  5. Steam beans for 7-10 minutes over 1 inch of boiling water.  Stir once. 
  6. Combine 2 tablespoons of extra virgin olive oil with 1 teaspoon of lemon.
  7. Drain beans, and toss with lemon mixture.
  8. Top with panko crumbs, and serve immediately.
