Ingredients
- 4 high-fiber tortillas
- 8 oz thinly sliced turkey breast
- 4 cups romaine lettuce
- 2 cups English hothouse cucumbers
- 1 mango
- 1/2 cup cilantro
- 1/2 avocado
- 4 tbsp cashews
- 2 tsp curry powder
- 1/2 cup lite mayonnaise
- 2 tsp lemon juice
- salt and pepper
Preparation
- In a small skillet, mix 2 tablespoons of curry powder over medium-high heat for about 2 minutes.
- Transfer curry powder to a small bowl.
- Stir in 1/2 cup of lite mayonnaise and 2 teaspoons of fresh lemon juice.
- Season with salt and pepper to taste.
- Spread equal amounts of the mayonnaise mixture over each of the 4 high-fiber tortillas.
- Slice 4 cups of romaine lettuce, 2 cups of English hothouse cucumbers, 1 mango, 1/2 of an avocado, and 1/2 cup of cilantro.
- Spread sliced ingredients evenly over each of the tortillas.
- Top with 4 tablespoons of cashews.
- Roll and serve.
