Ingredients

  • 4 high-fiber tortillas
  • 8 oz thinly sliced turkey breast
  • 4 cups romaine lettuce
  • 2 cups English hothouse cucumbers
  • 1 mango
  • 1/2 cup cilantro
  • 1/2 avocado
  • 4 tbsp cashews
  • 2 tsp curry powder
  • 1/2 cup lite mayonnaise
  • 2 tsp lemon juice
  • salt and pepper

Preparation

  1. In a small skillet, mix 2 tablespoons of curry powder over medium-high heat for about 2 minutes.
  2. Transfer curry powder to a small bowl.
  3. Stir in 1/2 cup of lite mayonnaise and 2 teaspoons of fresh lemon juice.
  4. Season with salt and pepper to taste.
  5. Spread equal amounts of the mayonnaise mixture over each of the 4 high-fiber tortillas.
  6. Slice 4 cups of romaine lettuce, 2 cups of English hothouse cucumbers, 1 mango, 1/2 of an avocado, and 1/2 cup of cilantro.
  7. Spread sliced ingredients evenly over each of the tortillas.
  8. Top with 4 tablespoons of cashews.
  9. Roll and serve.
