Ingredients

  • 1 cup regular oats
  • 3 oz Parmesan cheese
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 12 oz boneless, skinless chicken breasts
  • 4 tbsp yellow mustard

Preparation

  1. Preheat oven to 450 degrees.
  2. Place 1 cup of oats in a food processor, and pulse for 20 seconds.
  3. Add 3 ounces  cup of Parmesan cheese, 1 teaspoon of dried oregano, 1 teaspoon of dried basil, 1/2 teaspoon of salt, and 1/2 teaspoon of pepper in a food processor.
  4. Pulse to combine, and transfer ingredients to a shallow bowl.
  5. Cut chicken breasts into strips. Place them in a separate bowl.
  6. Coat chicken strips with mustard.
  7. Roll coated chicken strips in the oatmeal mixture.
  8. Place chicken strips on a baking sheet lined with foil and sprayed with non-stick cooking spray.
  9. Bake for 10 to 15 minutes (or until browned) 
  10. Serve with ranch dressing or honey mustard for dipping.
