Ingredients
- 1 lb shrimp
- 1/2 cup flour
- 1 large egg
- 1/2 cup low-fat buttermilk
- 1/4 tsp cayenne pepper
- 1/2 tsp salt
- 1/2 tsp pepper
- 30 saltine crackers
- 4 cups kettle-cooked potato chips
- 6 tbsp canola oil
Preparation
- Preheat oven to 450 degrees.
- Place 1/4 cup flour in a shallow baking dish.
- Beat 1 large egg and 1/2 cup of buttermilk in a medium bowl. Whisk the remaining 1/4 cup of flour, 1/4 teaspoon of cayenne pepper, 1/2 teaspoon of salt, and 1/2 teaspoon of pepper into the buttermilk mixture.
- In a food processor, pulse 30 saltine crackers and 4 cups of kettle-cooked potato chips until finely ground.
- Put ground chips and crackers into a shallow dish.
- Working one at a time, dredge each piece of shrimp the flour (shake off any excess).
- Dip shrimp in the buttermilk mixture (allowing the excess to drip off), then roll shrimp in the chip and cracker dish (coat evenly with crumbs).
- Put shrimp on a plate.
- Pour 3 tablespoons each onto rimmed baking sheets.
- Place baking sheets in the oven, and heat until just smoking (about 8 minutes).
- Carefully tilt the baking sheet to make sure it's coated in oil., then arrange shrimp in a single layer on the sheets.
- Bake for 10 minutes (flip after 5 minutes).
- Transfer to paper towels to drain and cool before serving.
