Peppercorn Seared Tilapia

Ingredients
- 4 tilapia filets
- 2 tbsp drained green peppercorns, lightly crushed
- 4 oz fresh lemon juice
- 2 tbsp unsalted butter
- 1/2 cup all-purpose flour, seasoned with salt and pepper
- 4 lemon wedges
- 2 tbsp chopped parsley
- 2 tbsp extra virgin olive oil
Preparation
- Heat saute pan over medium-high heat, add olive oil.
- Dredge tilapia in flour and shake off excess.
- Place fish in saute pan, and cook for 2 minutes.
- Flip fish over, and cook another 2 minutes.
- Remove from pan and place on serving dishes.
- Add 2 tablespoons of unsalted butter to pan and swirl around.
- Before completely melted, add 2 tablespoons of peppercorn, 4 ounces of lemon juice, and 2 tablespoons of parsley.
- Remove from heat and stir.
- Season with salt and pepper if needed.
- Pour the sauce over the tilapia, and serve with lemon wedges.
