Ingredients
- 1 pork tenderloin (6 oz)
- 1 high-fiber tortilla
- 1/2 cup coleslaw
- 2 cups salad greens
- 1/2 tomato
- 1/4 cup cucumber
- 1/4 cup carrots
- 1 tsp low-fat salad dressing
- 1/2 cup Hoisin sauce
- 2 tbsp chopped garlic
- 2 tbsp chopped ginger
- 1/2 cup chopped green onions
- 1/2 cup red wine
Preparation
- Chop 2 tablespoons of garlic, 2 tablespoons of ginger, and 1/2 cup of green onions
- Combine garlic, ginger and green onions with 1/2 cup of Hoisin sauce and 1/2 cup of red wine in a bag.
- Place 1 pork tenderloin in the bag, and let it marinate for 1 hour.
- While pork is marinating, mix 1/2 cup of coleslaw, 1/2 of a chopped tomato, 1/4 cup of cucumber, and 1/4 cup of carrots to create a salad.
- Remove pork from marinade and grill or cook in a pan until internal temperature reaches 140 degrees.
- Place pork on plate with coleslaw salad and top salad with 1 teaspoon of low-fat salad dressing.
