Ingredients
- 1/3 cup crumbled bleu cheese
- 1/2 cup mayonnaise
- 1 tbsp lemon juice
- 6 slices whole wheat bread
- 1 bunch arugula
- 1/2 lb deli sliced roast beef
- 1/2 cup onions
- 1 tsp extra virgin olive oil
Preparation
- In a medium sauce pan, cook 1/2 cup of sliced onions with 1 teaspoon of extra virgin olive oil over medium-high heat until caramelized.
- In a small bowl, stir together 1/3 cup crumbled bleu cheese, 1/2 cup mayonnaise, and 1 tablespoon lemon juice. Set aside.
- Divide bleu cheese spread evenly between the 3 slices of bread.
- Slice 1 bunch of arugula and split between the bread slices.
- Separate 1/2 pound of deli sliced roasted beef and 1/2 cup of caramelized onions between the bread.
- Top each sandwich with another slice of bread and serve.
