Ingredients

  • 1/3 cup crumbled bleu cheese
  • 1/2 cup mayonnaise
  • 1 tbsp lemon juice
  • 6 slices whole wheat bread
  • 1 bunch arugula
  • 1/2 lb deli sliced roast beef
  • 1/2 cup onions
  • 1 tsp extra virgin olive oil

Preparation

  1. In a medium sauce pan, cook 1/2 cup of sliced onions with 1 teaspoon of extra virgin olive oil over medium-high heat until caramelized.
  2. In a small bowl, stir together 1/3 cup crumbled bleu cheese, 1/2 cup mayonnaise, and 1 tablespoon lemon juice. Set aside.
  3. Divide bleu cheese spread evenly between the 3 slices of bread.
  4. Slice 1 bunch of arugula and split between the bread slices.
  5. Separate 1/2 pound of deli sliced roasted beef and 1/2 cup of caramelized onions between the bread.
  6. Top each sandwich with another slice of bread and serve.
