Ingredients

  • 12 oz chicken breast, roasted
  • 5 oz baby spinach
  • 8 tbsp hummus
  • 8 slices whole wheat protein bread

Preparation

  1. Spray non-stick pan with cooking spray and saute baby spinach.
  2. Season with salt and pepper. Set aside.
  3. Toast bread and spread 1 tablespoon of hummus on each slice.
  4. Top four slices with 3 ounces of chicken each.
  5. Add roasted red pepper on top of the chicken.
  6. Put sauteed spinach over the chicken.
  7. Top with the other slice of bread and serve.
