Sesame-Encrusted Salmon

Ingredients

  • 4 salmon steaks (3oz)
  • 3 cups polenta
  • 2 egg whites
  • 1 cup water
  • 1/2 cup sesame seeds

Preparation

  1. Preheat oven to 400 degrees.
  2. Place 3 cups of polenta on a plate. On a separate plate, spread out 1/2 cup of sesame seeds.
  3. Put 1 cup of water in a small bowl, and add 2 egg whites. Mix well. 
  4. Put the water in a small bowl, add the egg white mixture and mix together.
  5. Dip the filets first in the water egg mixture, and then into the polenta.  Coat both sides evenly. 
  6. Press both sides of the salmon into the seeds, resulting in a light sesame coating.
  7. Place salmon on a baking sheet lined with tinfoil and sprayed with non-stick cooking spray.
  8. Bake for 10-12 minutes.
