Ingredients
- 4 tbsp extra virgin olive oil
- 1 lb ground turkey breast
- 16 tomatillos
- 1 onion, chopped
- 1 poblano pepper, chopped
- 1 jalapeno, chopped
- 1 tbsp cumin
- 1 tbsp oregano
- 1 lime
- 1 cup chicken stock
- 2 avocados, chopped
- 1/4 red onion, sliced
- 2 tomatoes, chopped
- 1 clove garlic, minced
- 4 crusty rolls
- salt and pepper
- 4 whole wheat buns
Preparation
- Preheat the broiler to high.
- Heat 2 tablespoons of extra virgin olive oil in a pan over medium-high heat.
- Add 1 pound of ground turkey breast to the pan. Break it into smaller pieces as you cook.
- Cook turkey until lightly browned (about 5 minutes).
- In a food processor, mix 16 tomatillos. Pulse until they're in small pieces.
- Add 2 tablespoons of extra virgin olive oil.
- Stir tomatillos in with the turkey.
- Mix in 1 chopped onion, 1 clove of minced garlic, 1 chopped jalapeno, 1 tablespoon of cumin, the zest from 1 lime, 1 tablespoon of oregano, 1 chopped poblano pepper, salt and pepper.
- Continue to cook for 2-3 minutes.
- Add the chicken stock, bring up to a simmer and cook for 5 minutes.
- In a small bowl, mash together 2 chopped avocados and the juice from 1 lime.
- Slice 1 red onion, and chop 2 tomatoes.
- Toast 4 whole wheat buns until slightly charred.
- Assemble the turkey, and top with the lettuce, tomato, onion, and avocado.
- Serve with your choice of side or alone.
