Ingredients
- 6 oz salmon
- 1 pita pocket
- 8 slices cucumber
- 8 carrots
- 1 cup broccoli
- 2 tbsp hummus
- 1 cup grape tomatoes
- 2 tbsp basil
- 1 tbsp olive oil
- 1/4 tsp lemon juice
- 1/4 tsp garlic
- 1/2 tsp salt
- 1/2 tsp pepper
Preparation
- Preheat oven to 350 degrees.
- Rub a 6 ounce salmon filet with 1 tablespoon of olive oil, 1/2 teaspoon of salt, 1/2 teaspoon of pepper, 1/4 teaspoon of chopped garlic, 2 tablespoons of fresh basil, and 1/4 teaspoon of lemon juice.
- Bake salmon for 30 minutes (check frequently).
- Once salmon is cooked, break it up into smaller pieces.
- Stuff a pita pocket with the salmon and 2 cups of fresh vegetables.
- Chop 8 slices of cucumber, 8 carrots, and 1 cup of broccoli as a side dish.
- Dip the cut vegetables in 2 tablespoons of hummus.
