Ingredients

  • 6 oz salmon
  • 1 pita pocket
  • 8 slices cucumber
  • 8 carrots
  • 1 cup broccoli
  • 2 tbsp hummus
  • 1 cup grape tomatoes
  • 2 tbsp basil
  • 1 tbsp olive oil
  • 1/4 tsp lemon juice
  • 1/4 tsp garlic
  • 1/2 tsp salt
  • 1/2 tsp pepper

Preparation

  1. Preheat oven to 350 degrees.
  2. Rub a 6 ounce salmon filet with 1 tablespoon of olive oil, 1/2 teaspoon of salt, 1/2 teaspoon of pepper,  1/4 teaspoon of chopped garlic, 2 tablespoons of fresh basil,  and 1/4 teaspoon of lemon juice.
  3. Bake salmon for 30 minutes (check frequently).
  4. Once salmon is cooked, break it up into smaller pieces.
  5. Stuff a pita pocket with the salmon and 2 cups of fresh vegetables.
  6. Chop 8 slices of cucumber, 8 carrots, and 1 cup of broccoli as a side dish.
  7. Dip the cut vegetables in 2 tablespoons of hummus.
