Tortilla-Crusted Tilapia

  • 4 tilapia fillets
  • 12 corn tortillas
  • 2 jalapeno peppers
  • 1/2 red pepper
  • 4 tsp lime juice
  • 1/2 cup cilantro
  • 1 tsp cumin
  • 1 tsp chili powder
  • 2 egg whites
  • 1 pinch salt and pepper


  1. Preheat oven to 425 degrees. 
  2. Line a baking sheet with foil and non-stick cooking spray.
  3. Place 12 corn tortillas on the baking sheet.
  4. Toast in oven for approximately 5 minutes, then let cool.
  5. Break toasted tortillas into pieces and place into a food processor. 
  6. Dice two jalapeno peppers and put them in the food processor.
  7. Add 4 teaspoons of lime juice, 1/2 cup of cilantro, 1 teaspoon of cumin, and 1 teaspoon of chili powder to the food processor.
  8. Pulse until mixture resembles crumbs. Season with a pinch of salt and pepper. 
  9. Place two beaten egg whites into a separate bowl.
  10. On a plate, spread out the tortilla mixture.
  11. Spray non-stick cooking spray on the baking sheet already lined with foil.
  12. Dip tilapia fillets into the egg whites, then press both sides into the crumb mixture.
  13. Place tilapia on the cooking sheet.
  14. Bake for 7 minutes.
