Tortilla-Crusted Tilapia

Ingredients
- 4 tilapia filets
- 12 corn tortillas
- 2 jalapeno peppers
- 1/2 red pepper
- 4 tsp lime juice
- 1/2 cup cilantro
- 1 tsp cumin
- 1 tsp chili powder
- 2 egg whites
- 1 pinch salt and pepper
Preparation
- Preheat oven to 425 degrees.
- Line a cooking sheet with tinfoil and non-stick cooking spray, and place 12 corn tortillas on the sheet.
- Toast in oven for approximately 5 minutes, then let cool.
- Break up tortillas into pieces and place into food processor.
- Dice 2 jalapeno peppers.
- Place diced jalapeno peppers in the food processor.
- Add 4 teaspoons of lime juice, 1/2 cup of cilantro, 1 teaspoon of cumin, and 1 teaspoon of chili powder.
- Pulse until mixture resembles crumbs, season with salt and pepper.
- Place 2 beaten egg whites into a bowl.
- On a plate, spread out the tortilla mixture.
- Spray non-stick cooking spray on the cooking sheet already lined with foil.
- Dunk tilapia filets into the egg whites, then press them into the crumb mixture.
- Place tilapia on the cooking sheet.
- Bake for 7 minutes.
