Tortilla-Crusted Tilapia

Ingredients

  • 4 tilapia filets
  • 12 corn tortillas
  • 2 jalapeno peppers
  • 1/2 red pepper
  • 4 tsp lime juice
  • 1/2 cup cilantro
  • 1 tsp cumin
  • 1 tsp chili powder
  • 2 egg whites
  • 1 pinch salt and pepper

Preparation

  1. Preheat oven to 425 degrees. 
  2. Line a cooking sheet with tinfoil and non-stick cooking spray, and place 12 corn tortillas on the sheet.
  3. Toast in oven for approximately 5 minutes, then let cool.
  4. Break up tortillas into pieces and place into food processor. 
  5. Dice 2 jalapeno peppers.
  6. Place diced jalapeno peppers in the food processor.
  7. Add 4 teaspoons of lime juice, 1/2 cup of cilantro, 1 teaspoon of cumin, and 1 teaspoon of chili powder.
  8. Pulse until mixture resembles crumbs, season with salt and pepper. 
  9. Place 2 beaten egg whites into a bowl.
  10. On a plate, spread out the tortilla mixture.
  11. Spray non-stick cooking spray on the cooking sheet already lined with foil.
  12. Dunk tilapia filets into the egg whites, then press them into the crumb mixture.
  13. Place tilapia on the cooking sheet.
  14. Bake for 7 minutes.
