Ingredients

  • 3/4 cup white flour, unbleached
  • 1 cup regular oats
  • 1/2 tsp baking soda
  • 3/4 cup dark brown sugar
  • 1/4 cup butter, softened
  • 1 tsp vanilla extract
  • 1 large egg
  • 3/4 cup dried cherries, chopped
  • 1/3 cup walnuts, chopped
  • 1/3 cup white chocolate chips
  • 1/4 tsp salt

Preparation

  1. In a large bowl, combine 3/4 cup of white flour with 1 cup of regular oats, 1/2 teaspoon of baking soda, and 1/4 teaspoon of salt.
  2. Stir mixture with a whisk.
  3. Place 3/4 cup of dark brown sugar and 1/4 cup of softened butter in the bowl of a stand mixer.
  4. Beat mixture at medium speed for about 3 minutes or until well blended.
  5. Add 1 teaspoon of vanilla extract and 1 large egg.
  6. Gradually mix flour mixture until blended.
  7. Add 1/3 cup of white chocolate chips, 3/4 cup of chopped dried cherries, and 1/3 cup of chopped walnuts.
  8. Coat a baking sheet with cooking spray.
  9. Place tablespoonfuls of cookie dough 2 inches apart on the sheet.
  10. Bake at 350 degrees for 12 minutes or until lightly browned.
  11. Take cookies from the oven, and cool on pan for 1 minute.
  12. Remove cookies from pan, and cool on wire racks before serving.
